Well-tended grapevines for Darland’s Aceto Balsamico in Monticello, NM, photo Steve Collins

It was a warm day in March when we visited the Old Monticello Organic Farm (OM of NM) in Monticello, NM northwest of Truth or Consequences, the only place in the USA producing Traditional Aceto Balsamico.  Steve and Jane Darland grow their own organic grapes for their award winning Aceto Balsamico. Their artisanal balsamic is produced using the intensive barrel aging process that has been the trademark of the centuries old producers in Modena Italy. The day we visited the vines were still dormant but signs of impending spring abounded.

    I’m a huge fan of organic food, but never been to an organic farm before. Wish I could visit this place.

      We try to eat mostly organic. Old Monticello Farm is truly amazing. They have a strong commitment to stewarding the earth.

    I love balsamic vinegar, mixed with mashed garlic gloves, dip in the sourdough bread and it’s a bite of pure taste bud goodness. Yum! Drat, now I’m craving…
