Green chile roasting time in Santa Fe

If it’s August and this is Santa Fe, it must be green chile roasting time. For the next six weeks or so the unmistakable intoxicating perfume of roasting chiles is everywhere.  This year’s chiles are just starting to come in. One of our favorites is Matt Romero Farms chile. Romero grows a wide range of chiles as (well as lots of other vegetables) at his family farm near Dixon and brings them to the Santa Fe Farmers Market where he roasts them. We then peel the char and remove the seeds before freezing them (if we don’t eat them all first).

Soon growers from southern New Mexico will bring tractor trailer loads to Santa Fe where buyers will buy whole burlap bags that are then roasted for them to take home, prepare and freeze.

You can use green chiles in lots of traditional New Mexico recipes as simple as freshly roasted and tucked into a tortilla to posole, stews, enchiladas and rellenos.

Santa Fe’s Shohko Café even has a sublimely delicious Green Chile Shrimp Tempura with Sweet Red Chile Sauce.

Besides these tasty ways of using New Mexico’s state vegetable, enterprising folks add them to pies. What’s more American than green chile Apple pie? Kathy Knapp of the Pie-O-Neer in Pietown, NM Makes a tasty version of this treat or you can make your own at home (see the recipe below).

    Believe me or not, but I didn’t try the green chile, but I ate a lot of apple pie last month in Lisbon :D!

      Our pleasure. Would love to taste that peach green chile pie. Peach pie is one of my favorites- chile must take it over the top!
