Celebrate New Year’s Eve with Ginger Peach Margaritas

Margaritas are popular in Santa Fe. So popular that Maria’s Mexican, a local restaurant boasts a list of 100. Put a little Santa Fe in your New Year’s Eve celebration and toast the year in with a margarita. Our ginger peach margarita is  are easy to make, and a great twist on the traditional version. Don’t worry that there are no fresh peaches in the market. Frozen peaches will work just fine: or substitute some mango.

Serves 6

Juice of 6 limes
6 TBS confectioner’s sugar
½ cup Cointreau
1½ cup Tequila
3 peaches, pits removed and cut in 2” chunks (or 2 cups frozen peaches)
1/3 cup crystallized ginger, chopped
1 cup crushed ice

Place all ingredients in a blender and blend thoroughly. Serve with shaved ice. Garnish with lime twist, lemon wedge or peach slice.
