Food Thoughts: Grilled Tomato Salad Dressing

Some of the best things are often the simplest. Roasted tomatoes as a base for a salad dressing yields excellent results for relatively little effort. If you don’t have a grill you can roast the tomatoes in the oven. I do have a grill and I love that I can char the tomatoes quickly before putting meat on to grill. Grilled meat, poultry or fish over salad is one of my favorite spring and summer meals. I added roasted red pepper to the dressing and love the results. I’m looking forward to trying this recipe with smoked tomatoes. It’s great to shake things up and try something new. Happy grilling!

1 red bell pepper
2 Roma tomatoes
1clove garlic coarsely chopped
¼ cup vinegar (either rice wine, red wine or balsamic)
2 tablespoons fresh herbs of choice (rosemary, basil, oregano, or your favorite)
¼ cup extra virgin olive oil
Salt and pepper to taste

Prepare a hot grill. Cut the tomatoes and peppers in half lengthwise. When the grill is hot; blister the outsides of the tomatoes and pepper. Cook for two minutes on each side, Remove from the grill and cool. When you can handle them comfortably, peel the charred skin off. Coarsely chop the tomatoes and peppers and put into the blender. Add the garlic and then the vinegar. Blend well. When mixture is pureed, drizzle the extra virgin olive oil through the hole in the top so it emulsifies. When the dressing is blended, add the fresh herbs.

We like to put the dressing on the salad and then add the meat or poultry on top. This will work with just about any protein you’d have tomatoes with, which is just about anything.
