Food Thoughts: Chiles Stuffed with Goat Cheese, Bacon and Pecans

I thought we’d start off 2012 with my fun take on a traditional chile rellenos recipe. Chiles Stuffed with Goat Cheese, Bacon and Pecans are cooked on the grill instead of battered and deep fried. Usually, this spicy dish is prepared with a white cheese that can be grated and melted. The goat cheese adds a creamier texture and a more distinctive flavor. I also added pecans, another crop New Mexico is known for. What a fabulous appetizer!

We are having warmer than usual weather here so grilling outside works just fine. If you’d prefer to cook these inside, preheat your oven to 375 degrees and cook them for 20 minutes.

Chiles Stuffed with Goat Cheese, Bacon and Pecans

Serves 6

3 Anaheim, New Mexico or poblano chilies, halved lengthwise and seeds removed


4 strips of apple wood smoked bacon
2 cloves garlic, minced
½ cup onion, diced
½ tsp. oregano
½ tsp. ground cumin
¼ cup pecans, coarsely chopped
1 eight-ounce goat cheese log

Prepare a hot fire in your grill. Cook the bacon and drain. Save a tablespoon of the bacon fat. Crumble the bacon and set aside. Wipe the pan clean. Heat the pan over medium heat. Add the saved bacon fat, then the garlic and cook for one minute. Add the onion and cook until soft (about 5 minutes). Add the cumin and oregano and cook for another minute. Let cool. Add this to the goat cheese and mix well. Add the crumbled bacon to the cheese and stir to incorporate. Fill the prepared chilies with the cheese mixture. Put the stuffed chiles on the grill directly over the heat. Cook for 12 minutes with the lid down. Remove from grill and let rest for 10 minutes. Enjoy with your favorite beverage.
